FortiGate Firewall Security Testing

Can you recommend some basic/advance tests to apply on the Firewall after configuring it, to ensure that everything is working properly.

If nothing is configured, what would you like to test?

The hardware test can be done at any point. Look for HQIP test, there are articles describing how to perform it (depending on the unit model)

What are you trying to test? If you are concerned about throughput, iPerf3 or OpenSpeedTest are my preferred software.
If you are trying to test the UTM features, it kinda depends on what you actually have configured.
