how do i edit the message header from the email alerts sent from the fortigate?

the subject header is Message meets Alert condition

my ForitOS version is 7.2.5

I believe you are using automation stitch for email alerts. You can change the email subject under Security Fabric > Automation > Action > Select the email action > Subject. https://community.fortinet.com/t5/FortiGate/Technical-Tip-Use-FortiGate-automation-stitches-for-alert-emails/ta-p/193355
