how can i use traffic shaping policy to control apple service like icloud and etc..

Refer to this document. At step 5, select the Apple services like iCloud, etc and add them to the list. This would traffic shape those applications.

under application catrgory and application sub-category, i still dont see services like apple icloud etc. 

i only see the default services

you need to apply "Application traffic shaping" enables to control traffic per application level. choose Icloud app and limit bandwidth on your WAN internet pipe.
