How do I configure my manage switch to monitor traffic to and from the controller?

You may do so by enabling port monitoring, or port mirroring in some switch setup, both will achieve the same thing. This will make a selected port mirror all traffic in and out of the port of interest so a user can put a PC with a sniffing software, such as Wireshark, and take packet capture and save it to a file to be reviewed at a later time. The advantage of taking packet capture on a laptop/PC is the size of the file you can store, capture on the controller is limited, but on a laptop/desktop it's limited by the hard drive space. This will allow you to get a continuous capture and only review if something happened.
