I configured my fortimail as gateway mode, so technically it will inspect both in/out of email passing in. Now, for testing purposes cant figure out how to bypass/skip Fortimail to scan outgoing traffic. What are the necessary changes to achieve this? thanks in advance

Several ways: = If you had defined outgoing recipient policies, don't apply protection profiles on it
or
if all your outgoing emails comes from the same IP server, define an IP policy for it with "Take precedence over recipient based policy match" checked; put it on top of others
