We have a Fortigate_FG50E as our main device here in our office. We leased space across the street and am wondering if I can put in a FortiGate_60F in there to communicate back so that they have access to our network? I was looking up some documentation but I wasn't sure.

Yes you can just use a basic IPSec tunnel.
SD-WAN would be useful if you had dual ISP feeds but not a necessity.
