Hey hey, my boss is the main admin of the fortigate firewall and he lost his phone with the 2FA.
I still have access to my account but I'm only a prof_admin.
Is there any way for us to reset this ? Like by plugging in directly ?

If you use the before version from 7.2.4, you can use the maintainer account to reset the admin 2FA setting or you can change your user profile prof_admin to super_admin.
If not, you can download the backup file and remove the related area about 2FA. After that, you need to factory reset the configuration of your FortiGate. After the factory reset you can restore the configuration you edited.
if you are able rto manage admins and 2fa was a token then remove it from user and save the re-add it again to the user to reset token activation
