I came across an information stating that FortiMail retains quarantined emails for 7 or 14 days before they are permanently deleted from the device. Is there a way to extend this retention period, for instance, to one month or so?

Sure, you just need to edit the "Resource" profile that you are using.
You find it under menu Policy > Recipient Policy > Inbound. Then you edit the profile used under the Resource column.
