I've looked at fortinet's documentation and upgrading the fortimanager seems straightforward.
What are the recommendations and important points to check when upgrading the fortimanager?
For example, do WE have to check the ADOM versions ? The database ?

I see that these commands have to be made before the upgrade.
I don't really understand what this is for, is it to check that there are no errors in the fortimanager database?
How can I export this database just in case?

If you see any errors in the series of integrity check, you should open a ticket at TAC to get it further investigated. If there is any errors, there is a great chance to damage DB further.
The DB is the major part of the config. You should backup the config before upgrading it. It's a binary file so you can't "read" it even you saved it outside ("exported").

In the backup file of the fortimanager, there will be all objects, interface configuration policy packages of all the firewall manage by the fortimanager ?

- the backup of FMG includes everything, it is the backup of the whole database
- integrity checks, checks the db and fixes errors if any
- backup (or snapshot in case of vm) are enough
- note that downgrade is not recommended and not supported, if you need to downgrade then you need tp factory reset and format the disk after downgrade before restoring the backup
