In Log > Log Settings is...
Logs older than 7 day(s) are deleted from the disk
Can I extend it to 10 days? 15 days? A month?

I think it depends on the modell. On my 61F, the max log age is 3650 days
MY-MASTER # conf log disk setting MY-MASTER (setting) # set maximum-log-age maximum-log-age Enter an integer value from <0> to <3650> (default = <7>).

No, sorry! It is by design.
If you want more logs, we needs to use FortiAnalyzer or subscribe the year FortiCloud services.

If you need log retention , forward the logs to an external device. Internal is limited by the size and total number of logs/per-sec
