I'm planning to force my policies to use SD-WAN with two ISPs; the problem that I may face is that, on my network, one of my service uses my internet IP address to communicate with the provider.
I don't know in the case of SD-WAN, what public IP address or from which interface would I get the IP.

You might be able to force the particular service / server to use one ISP to go to the particular provider, using SD-WAN policy rules, while all other traffic can use load balancing.
