I am trying to make changes to SSIDs on the Fortiportal but they are all greyed out for configuration.
Is there an access or setting that I have to enable for making changes to the SSIDs, passwords and security mode?

From the image, you will that the SSID and password has been greyed out and I cannot make any changes
There can be several reasons for this:
Does this user has enough permissions to edit the SSID Interface ?
What is the interface state ? It should be online ?
Do you have the latest firmware version ? Which one ?
Have you tried with other browser?
yes, I have tried with user having access to the specific site as well as with admin.

There is nothing wrong with the configuration.
I did some quick tests in my lab now and reproduced the same as you only if the user has read privileges. With right permissions i can edit, with read not possible.
This is the admin profile generating same as you.
This user has the profile in which Wifi Read/Write permissions have been given. is there anywhere else I need to give the user permissions besides the fortiportal?
In order to edit the SSIDs you need a Read/Write for the WiFi & Switch .
If i disable it i loose the editing privileges on the SSID.
I believe this will be enough for you to edit them.
