If you can set up a lab environment and have basic networking knowledge, you can start as follows.
First of all, you can deploy a Fortigate and a client, restrict the access of this client and learn how the rule structure works. You can then add security profiles to these rules and learn how a web filter or application control works.
In addition, you can use attack tools such as kali linux to test features such as ips or antivirus and learn how to prevent such attacks on FortiGate.
Later, you can enlarge this topology, deploy another FortiGate and Client, and communicate with each other with S2s VPNs between these two Fortigates. In this way, you can learn how to connect two sites securely. While learning this, you will also learn routing procedures.
I can give these as examples of quick things that can be done at the first stage and things that need to be learned.
Probably this is beyond your employer's expectation and not sure what kind of Forti-something you can have your hands on. But if you're really new to this field/industry, I would suggest at least four areas you should try focusing on:
1. Layer2 switching
2. Layer3 routing
3. VPN technologies
4. FWing
and hopefully you can touch...
5. WiFi management
as well.

it's unlikely your manager or supervisor will entrust you with a big project right away.
maybe you could ask by making an audit and "harden" your fortigate device?
this way, you'll learn how the FG are setup and start with the basics while studying the FG course.
