Hi, I have some experience sdwan on viptela system, which need vsmart, vbond and vmanager etc. After I review sdwan with fortigate, I feel fortigate is pretty easy. My question is, it is possible for us to run sdwan with fortigate on lab or eve-ng? Thanks

Yes you can run but you need multiple WAN link to get it test in lab
You can also simulate WAN links in a lab using things like NetEm on linux.

Just create a linux VM on your network and configure some dummy network interfaces on it to simulate WAN connections.
You'll have to enable things like routing on the box. And then you can enable netem to simulate packet loss, latency, etc across those links.
