“Is it possible to run FortiLink between a FortiGate and a switch over a Wi‑Fi bridge using two antennas, such as Ubiquiti Loco M5? Are there any known limitations or issues with stability?

No. FortiLink does not work for non-Fortinet devices.
Here the 3rd party switch is not involved in FortiLink and doesn't need to support it, it is just a bridge for it.
