Please can anyone provide a brief description of what STP MODE within the FortiAP configuration is supposed to do when it is enabled?
If it is related to Spanning Tree, how does the mode operate when spanning tree is also configured on the switch port is connected to?

The command is used to enable Spanning Tree as shown also in the guide. Theoretically it's not significant, but in rare cases, particularly with bridged SSIDs that could create L2 loops, it can be useful to prevent such issues. For most of the deployments is not needed and should be left disabled, the Broadcast suppression and the STP in the switch can handle and minimize the impact in case a loop appears.
