What is the suggested method for updated FortiAPs(And FortiSwitches for that matter) that are connected to a Fortigate? All devices are currently on 6.x and are working fine, but when I go to update the FortiGate with 7.x, should I do the Switches and APs first or last? Does it matter?

As long as they're compatible, I don't think it matter which one you do first.
It's better if FGT upgraded first to the version that is still compatible with the current FSW/FAP version. Then you can plan further from that.

Just to add on slightly on top of @darisandy statement, please check the security fabric upgrade order listed in the administrative guide:
Please upgrade FortiGate first and proceed with FortiSwitch and then FortiAP as it maintains network connectivity without the need to use manual steps.
