The way to disable a session helper is to actually delete it.

Session helpers on Fortigate work like a proxy ...
Yes, you can disable any session helper (actually to disable a session helper you need to delete it) but keep in mind if you are deleting any of the session helper and you have some established session relevant to this session, these sessions will be cleared, in that case delete the session helper in maintenance.
And of course when you will delete any session helper, Fortigate will not proxy sessions for those session helpers.
