Probably a dumb question...
I only want to access my fortigate through VPN. I am using the forticlient to establish a SSL-VPN connection.
How can I then access the Fortigate web admin Gui? What IP do I have to enter in the browser. Do I have to configure other setting?

You must have access to the LAN side of the FGT via your SSL VPN. Then allow access (https, ssh) on the LAN interface and use that IP to get in.

By "You must have access to the LAN" is meant you must have a policy that would allow traffic from SSL VPN to LAN.
In case you are managing the FortiGate on standard port 443, then HTTPS service is sufficient, in case you chose some custom port the policy must allow this.
