Best practices for FortiGate Logging?

I'm new to Fortinet products and I am looking for additional opinions on logging. I have found that many of our policies have logging disabled which makes it difficult to troubleshoot when we have issues.

I would like to revisit the decision and make sure it is still the "best practice" to do it this way. (We do have FortiAnalyzer)

What do you do in terms of logging?
Is there a best practices document that I am just incapable of finding in my google searches?
